Spicy Sweet Potato Beef Tacos

  • 1 head Butter lettuce

  • 1 Sweet potato, medium to large

Ingredients

• 1 lb Ground Beef
• 1 medium to large Sweet Potato, spiralized or shredded
• 1/4 cup water
• 2 tablespoons Taco Seasoning
• 1 head Butter Lettuce
• 1 lime, cut in wedges
• Salsa (optional)

Directions

• Heat pan over medium-high heat. Once pan is nice and hot, add ground beef and sweet potato noodles. Saute until meat is thoroughly browned and sweet potato is nice and soft. Add 1/4 cup water and taco seasoning to pan. Stir well to incorporate. Lower heat and simmer until liquid reduces - about 4-5 minutes. Spoon into butter lettuce leaves, squeeze some fresh lime juice over the top and enjoy!
