Hearty spiralized casserole of root vegetable noodles - turnips, rutabagas, and sweet potatoes - in an easy vegan alfredo sauce and topped with gluten-free bread crumbs. A simple weeknight main meal.

Ingredients

  • ⅓ cup raw cashews, coarsely chopped
  • ¾ cup unsweetened almond milk
  • ½ small shallot, quartered
  • 1 clove garlic, chopped
  • 2 tsp gluten-free dijon mustard
  • 2 tsp gluten-free tamari
  • 3 tbsp nutritional yeast
  • 1 tbsp tahini
  • 2 tbsp vegan butter
  • ¼ tsp kosher sea salt
  • ¼ tsp paprika
  • ⅛ tsp ground nutmeg
  • 8 oz spiralized turnip (about 2 medium turnips)
  • 12 oz spiralized sweet potato (about 2 large sweet potatoes)
  • 12 oz spiralized rutabaga (about 2 small rutabagas)
  • 2 slices gluten-free bread, toasted and finely chopped into crumbs (about 1 cup)
  • ½ tbsp dried oregano

Directions

  • Preheat oven to 350 F. Lightly spray a 9x13 casserole dish with cooking spray.
  • Toast two pieces of gluten-free bread and coarsely chop into bread crumbs (yield about 1 cup). In a large Ziploc baggie, shake the bread crumbs with dried oregano to combine. Set aside.
  • In a food processor or blender, combine all vegan alfredo ingredients and pulse until smooth.
  • Place the spiralized noodles in a large bowl, trimming any long noodles with kitchen scissors. Add half of the vegan alfredo and toss with tongs to coat.
  • Place the spiralized noodles in the bottom of the casserole dish. Pour the remaining sauce evenly over the noodles.
  • Cover and bake for 30 minutes. Remove the cover and sprinkle the bread crumbs over the top of the spiralized noodles. Bake, uncovered, for an additional 15 minutes.
  • Remove casserole from the oven and cool for 10 minutes. Slice into squares and serve immediately.
