Ingredients

  • 3 cups Old Fashioned Traditional Oats
  • 1½ cups Strawberries, diced
  • 1 cup Blueberries
  • 3 large Bananas
  • 1 cup Unsweetened Vanilla Almond Milk
  • ¼ cup Peanut Butter (drippy or slightly melted)
  • 2 tbsp Coconut Sugar
  • 1 tbsp Baking Powder
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • ½ tsp Sea Salt
  • 1 Egg

Directions

  • Preheat oven to 350 degrees farenheit and spray a muffin tin with non-stick baking sprray or line with with muffin liners
  • Place bananas in a bowl and mash with a fork
  • Add peanut butter, almond milk, coconut sugar, vanilla extract, and egg and stir together
  • Add oats, baking powder, cinnamon, salt, and stir together
  • Fold in diced strawberries and blueberries
  • Spoon mixture into muffin cups
  • Bake in preheated oven for 25-28 minutes
  • Let cool before serving
