    • 4 1/2 tbsp Lemon juice

    • 3 1/2 cups White sugar

Ingredients

  • 16 cups (4 lbs.) strawberries, sliced
  • 3 1/2 cups white sugar
  • 1 1/4 cup Clear Jel
  • 4 cups water
  • 4 1/2 tbsp. lemon juice

Directions

  • Prep all your water bath canning, mason jars, lids and rings accordingly. Slice strawberries and set aside. In a large stock pot, combine sugar, Clear Jel, water, and lemon juice. Bring mixture to a boil while stirring often. I like having it on medium heat so to not scorch the mixture. Stir or fold in sliced strawberries once stock pot mixture comes to a boil and mixture is thickened. Remember once processed and cooled, the filling will be thickened even further. Reduce to low heat and spoon into sterile mason jars. Leave 1-1/2 inch headspace. Process in water bath canning for 30 minutes.
