Sugar Free “Mounds” Fudge (THM-S, Low Carb

Ingredients

  • Condiments

    • 1/2 cup Coconut butter
  • Oils & Vinegars

    • 1 tbsp Coconut oil, virgin
  • Nuts & Seeds

    • 2 tbsp Coconut, unsweetened
  • Dairy

    • 1/4 cup Heavy whipping cream
  • Desserts

    • 1 Recipe two ingredient fudge
  • Other

    • 2 Tablespoons Gentle Sweet

  • 1 Recipe Two Ingredient Fudge
  • 1/2 Cup Coconut Butter (also called Coconut Manna)
  • 1 Tablespoon Virgin Coconut Oil (Can use refined coconut oil, but the virgin unrefined adds more coconut flavor)
  • 2 Tablespoons Gentle Sweet
  • 2 Tablespoons Unsweetened Coconut (Finely Shredded)
  • 1/4 Cup Heavy Whipping Cream

Directions

  • Make 2 Ingredient Fudge Recipe
  • In 9 cavity silicone pan, put 1-2 Tablespoons fudge mixture in each cavity, then place in freezer to harden.
  • Meanwhile, warm 1/2 cup coconut butter until it is soft.
  • Add melted coconut oil, Gentle Sweet, coconut, and heavy cream and mix well (I used my hand mixer).
  • After fudge has firmed up ( 20 minutes or so), add enough coconut mixture to cover the fudge completely in each cavity.
  • Place back in the freezer for 10-15 minutes.
  • Place remaining fudge on top of coconut mixture and place back in the freezer to completely harden,
  • Remove from silicone pan and slice into pieces. I like to keep my fudge in the refrigerator so it is soft.
