  • 4 cups Green cabbage
  • 1/3 cup Green onion
  • 1 Jalapeno pepper, small
  • 1 Red bell pepper

• Condiments

  • 3 tbsp Lime juice, fresh

• Oils & Vinegars

  • 4 1/2 tbsp Olive oil

• Nuts & Seeds

  • 2 1/2 tsp Cumin, ground
  • 3 heaping tsp Pepitas

Description

Ingredients

• 4 cups thinly sliced green cabbage (from about 1/2 large head)
• 1 red bell pepper, chopped
• 1/3 cup green onion, chopped
• 1/2 cup chopped fresh cilantro
• 1 small jalapeño pepper, seeded, minced
• 3 heaping teaspoons pepitas (pumpkin seeds)
• 4 1/2 tablespoons olive oil
• 3 tablespoons fresh lime juice
• 2 1/2 teaspoons ground cumin

Directions

• Combine cabbage, bell pepper, green onion, cilantro, jalapeño and pepitas in large bowl. Toss to blend. Whisk oil, lime juice, and cumin in small bowl to blend. Pour dressing over cabbage mixture. Season to taste with salt and pepper. Toss and serve.
