A dreamy classic acai bowl inspired by San Diegos finest.

Ingredients

  • 2 C frozen strawberries
  • 2 packets of pureed acai, unsweetened
  • 1 fresh banana
  • ¼ C almond milk
  • ⅔ C + ¼ granola, divided (we like Nature’s Path Hemp Plus Granola)
  • 2 T coarsely chopped almonds
  • Fresh, sliced, seasonal fruit: ½ a sliced banana, a handful of blueberries, or sliced peaches, get creative!
  • ¼ C shredded coconut (coarsely shredded is preferred)
  • A drizzle of your favorite honey (local and raw is ideal)

Directions

  • Run the acai packet, still in the plastic, under warm water until you can break it up into smaller chunks.
  • Cut open the plastic, add to a food processor along with the frozen strawberries. Pulse until the mixture turns into pea-size crumbs.
  • Add the banana and almond milk.
  • Blend thoroughly.
  • Once it is smooth and thick like soft serve ice cream, it’s ready.
  • Divide the larger portion of granola between the two bowls.
  • Divide the acai evenly.
  • Evenly distribute the rest of the granola, fresh fruit, the almonds, coconut, and lastly, a generous drizzle of honey on top.
