Description

Make this berry syrup sugar free or sugared, your choice. It is simple to make and delicious on pancakes, waffles, ice cream, muffins or biscuits.

Ingredients

  • 2 cups of frozen mixed fruit
  • 1 cup of water
  • 2 tbl. lemon juice
  • ½ tbl of stevia powder or sweetener to taste
  • ½ tsp of gluconmannan or pectin

Directions

  • To my Vitamix blender I added 2 cups of frozen mixed berries.
  • Next I added 1 tsp. of vanilla, 2 pinches of salt, and 2 tablespoons of lemon juice.
  • Lastly I added 1 cup of water.
  • I secured the lid on the Vitamix and blended it at an 8. Then I added ½ tbl. of stevia powder. Add more or less to your liking. At this point you can add any sweetener you want to it sugar, maple syrup, stevia, truvia, agave, etc. Blend it at a 10 for 3 seconds.
  • Once blended I poured it into a saucepan over medium heat.
  • Once heated I added about 4 pinches of glucomannan which is a natural thickener. You could also add a little pectin to thicken it as well. Whip really well with a wire whisk to break down the thickener. Cook over heat for 5-7 minutes until it thickens up.
  • Let it cool and pour into old syrup bottles or a mason jar.
