  • Pudding:
  • 1 cup almond milk
  • 1/3 cup chia seeds
  • 1/4 teaspoon pure vanilla extract
  • Smoothie:
  • 1 mango, cubed
  • 1/4 cup almond milk
  • 1 cup frozen pineapple, chunks
  • 1/2 tablespoon honey (optional - recipe will be vegan if honey is not used)
  • Garnish: (optional)
  • Kiwi
  • Coconut Flakes

Directions

  • In a medium bowl mix together 1 cup almond milk, 1/3 cup chia seeds and 1/4 teaspoon pure vanilla extract.
  • Place in refrigerator for about 15 minutes for the chia seeds to absorb the liquid.
  • In a blender combine the almond milk, mango, pineapple and honey.
  • If youd like to use the kiwi garnish; thinly slice kiwi and place on the inside of the glass.
  • Take the chia pudding out of the refrigerator.
  • Layer a glass first with the chia pudding, then with the smoothie.
  • Garnish with your favorite fruit, nuts, etc.
