Ingredients

  • 2 cups organic chickpeas* (for best flavor used precooked, dried chickpeas)
  • 3 Tablespoons organic tahini
  • 1/3 cup organic lemon juice (equivalent to about 2-3 lemons)
  • 1/4 cup cold pressed organic olive oil, drizzled
  • 1 and 1/3 teaspoon garlic powder
  • 1/2 teaspoon Himalayan pink salt
  • 3 Tablespoons filtered water, divided

Directions

  • Process the tahini and lemon juice for a minute and a half. Stop the processor at 30 second intervals to scrape down the sides. You should have scraped it down 3 times before the next step
  • To your food processor, add the chickpeas, salt, garlic powder and 2 Tablespoons of water.
  • Pulse a few times to combine the mix. Once combined process for about 2 minutes adding the oil and water in the process.
  • About 30 seconds into processing, slowly drizzle the oil while the processor is still running.
  • Pour in the last Tablespoon of water. Add more if needed for a smooth, ultimate hummus.
  • Taste and adjust seasonings if needed. Sometimes Ill add a bit more lemon juice, salt and/or garlic powder.
  • Chill for at least an hour before devouring.
  • Garnish with paprika, optional.
