  • Wet Ingredients
  • ½ C Shortening
  • 1 C Sugar
  • 3 Eggs
  • 2 tsp Vanilla
  • ½ C Hot Water
  • Dry Ingredients
  • 2 C Flour
  • ½ tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • Icing Recipe
  • 1 C Shortening
  • 4 C Powdered Sugar
  • 4 Tbsp water
  • 2 Tbsp milk

Directions

  • Pre heat oven to 425°In a large bowl combine and mix all wet ingredients EXCEPT HOT WATERIn medium size bowl combine dry ingredientsAdd ½ dry ingredients to wet ingredients and mix. Repeat with 2nd half of dry ingredients.Add Hot water and mixI used a 2” cookie scoop for the whoopie pies. Use a lightly greased or parchment covered cookie sheet.Bake for 6 to 7 minutes.
  • Using a mixer combine shortening and powdered sugarAdd powdered sugar 1 cup at a time adding 2 Tbsp of water with each cup and ending with the 2 Tbsp of milkOn med/high speed mix icing for 5 minutesScrape sides of bowl with spatulaOn high speed mix icing for another 5 minutesFluff with spatula
