Vegan Cacao & Nut Butter Granola

  • 1/3 cup And 1 tbsp coconut nectar

Description

Ingredients

• 3 cups gluten-free oats
• 1/3 cup organic coconut oil
• 1/3 cup and 1 tbsp coconut nectar
• 1/3 cup to 2/3 cup nut butter, (I used a little less than 2/3 cup)
• pinch of celtic sea salt
• 1/3 cup of raw cacao nibs

Directions

• Preheat your oven to 350F.
• In a pan over medium heat, melt and combine the coconut oil, coconut nectar and nut butter.
• Add the melted mixture to a big bowl with the oats, and stir to evenly coat all of the oats. Add in a pinch of salt.
• Lay the oat mixture on a flat baking sheet lined with parchment paper. Bake for about 25 minutes, shaking and rotating the baking sheet half way through to evenly bake the granola.
• Once the oats are golden brown and slightly crunchy, remove from the oven and toss in the raw cacao nibs. Let cool completely before eating!
• Store in an air-tight container for 1-2 weeks in the pantry.
