This Vegan Pumpkin Spice Latte is rich, creamy, frothy and aromatic. Its free of refined sugar, dairy, gluten and processed junk. This dreamy beverage contains real organic pumpkin, spices, pure vanilla extract, almond milk, pure maple syrup and espresso. Nothing but goodness to celebrate fall!

Ingredients

  • 3 tablespoons pumpkin purée
  • 1 teaspoon pumpkin pie spice *See note
  • 2 cups almond milk (or any plant-based milk)
  • 2 1/2 tablespoons pure maple syrup (or preferred sweetener)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup brewed espresso *See note

Directions

  • In a small sauce pan, heat the pumpkin puree & spices over medium low heat. Stir constantly to combine well & prevent from burning. Cook for 1-2 minutes.
  • Turn up heat to medium and add the milk. Whisk for 2-3 minutes, until heated throughout. (dont boil)
  • Whisk in vanilla extract & maple syrup. Remove from heat.
  • Place mixture in a blender. Blend on high until smooth, about 1-2 minutes. (This will make the milk frothy too)
  • Add 1/4 cup hot espresso to each mug & pour pumpkin spice mixture on top.
  • *Optional: Top with vegan whipped cream, a sprinkle of cinnamon and garnish with a cinnamon stick (doubles as a straw). Enjoy!
