Venison Breakfast Sausage Patties

  • 1 lb Venison, ground

  • 1 tsp Paprika, smoked
  • 1 1/3 tbsp Salt

Ingredients

• 1 lb. ground venison
• 2 lb. ground pork
• 1-1/3 tbsp. salt
• 2 tsp. black pepper
• 1 tbsp. sage
• 1 tsp. fennel seeds
• 1 tsp. smoked paprika
• 1 tsp. dried oregano
• 1/2 tsp. mustard powder
• 1/2 tsp. ground cumin
• 1/2 tsp. cayenne powder

Directions

• Mix together the ground venison and the ground pork. In a separate bowl, mix the spices together. Once mixed, combine the spices with the ground meats. Spread out meat on a cutting board, so that it fills the cutting board and is 1/4-inch in thickness. Use a cookie cutter to create circular patties. Using a spatula, remove the patties to wax paper. Cover top of patties with wax paper. Cover and leave in the refrigerator, or place in zipped plastic bags if storing for later use.
