A deliciously simple, raw, vegan, gluten-free Vietnamese watermelon salad, made with just 5 ingredients.

Ingredients

  • Cubed watermelon (preferably cold)
  • Sea salt
  • Rice vinegar
  • Fresh basil, thinly sliced
  • Fresh mint, chopped
  • Fresh cilantro, chopped

Directions

  • Place cubed watermelon in a colander and toss with a sprinkling of sea salt. Let some of the liquid drain out while you chop up the herbs.
  • Toss the watermelon cubes with rice vinegar - roughly 1 to 2 tablespoons of rice vinegar per cup of watermelon, but you can adjust this to taste. Mix in the fresh herbs, and enjoy! This is best served cold.
