  • 1 french baguette, sliced about ¼-inch thick
  • 2 tablespoons olive oil
  • Salt and pepper
  • 4 ounces goat cheese, softened at room temperature*
  • 2-3 ounces plain Greek yogurt, at room temperature*
  • 1 tablespoon freshly-squeezed lemon juice
  • 4 ounces sliced prosciutto
  • 1½ cups arugula
  • 1-2 tablespoons honey

Directions

  • Preheat oven to 350 degrees F. Arrange baguette slices on a baking sheet and drizzle both sides with olive oil and season with salt and pepper. Bake 5-7 minutes, or until crostinis are lightly toasted and golden brown. Remove from oven and set aside.
  • Meanwhile, using a hand mixer, or in a blender, mix together the goat cheese and Greek yogurt until well combined. Squeeze in a tablespoon of lemon juice and a pinch of pepper and transfer to a bowl. (Note: its really important that the cheese has sat out at room temperature for a while and is completely softened, so its easier to combine!)
  • In a small bowl, toss the arugula with a little bit of olive oil and season with salt and pepper.
  • To assemble: you can either spread the goat cheese onto the crostini ahead of time, or leave it in a bowl and let people assemble on their own. Top the goat cheese crostini with a few pieces of the arugula and a slice of prosciutto. Drizzle a little bit of honey over top and enjoy!
