Forget avocado toast! White Bean and Wilted Kale Toast is great as a snack, breakfast, or lunch. Plus its packed with TONS OF FLAVOR.

Ingredients

  • 2 slices sourdough bread (sub bread of choice)
  • 1 can white beans, drained and rinsed
  • ½ lemon, juiced
  • 1 tablespoon nutritional yeast
  • 1 teaspoon honey
  • ½ teaspoon turmeric
  • ½ teaspoon smoked paprika
  • dash of salt & pepper
  • 2 teaspoons ghee (sub coconut oil)
  • 2 cups kale, chopped
  • dash of salt & pepper
  • 2 eggs, poached
  • hot sauce (optional)

Directions

  • In a medium bowl add your white beans, lemon juice, nutritional yeast, honey, turmeric, smoked paprika, salt and pepper. Toss until everything is evenly coated, and then mash the beans until a paste forms.
  • Toast your sourdough slices to your liking, and spread an even amount of white bean paste onto each slice.
  • Heat a skillet over low heat with 2 teaspoons ghee. Add in kale, salt and pepper. Toss consistently for 3-5 minutes, or until the kale is wilted and soft.
  • Top each piece of bread with an even amount of wilted kale. Add a poached egg to the top of each toast, and drizzle with your favorite hot sauce!
  • EAT UP.
