4 ingredients, 5 minutes, no rolling. This healthy, gluten-free and vegan pie crust will make your pies much healthier without anyone noticing. Plus its infinitely easier to make than traditional crusts.

Ingredients

  • For a 10 inch pan, bottom and edges
  • 2 and ½ cups (200g) gluten-free oats (or 2 and ¼ cups oat flour)
  • ¼ cup (60ml) coconut oil (or canola oil for a nut free option)
  • 2 tablespoons (30ml) water
  • 3 tablespoons (35g) erythritol, xylitol, coconut sugar or another granulated sweetener
  • For a 10 inch pan, bottom only
  • 2 cups (160g) gluten-free oats (or just under 2 cups oat flour)
  • 3 tablespoons and 1 teaspoon (50ml) coconut oil (or canola oil for a nut free option)
  • 5 teaspoons (25ml) water
  • 2 tablespoons and 2 teaspoons (30g) erythritol, xylitol, coconut sugar or another granulated sweetener

Directions

  • I like to make this crust in a food processor because it is the easiest and fastest.
  • Start with prepping a 10-inch pie or tart pan. Grease it or line with parchment and set aside. If you want to pre-bake the crust, pre-heat your oven to 350 (180 Celsius).
  • Put your oats in a food processor and pulse until they turn into flour. (Skip this step if using ground oats or oat flour)
  • Add the remaining ingredients and keep processing until the mixture sticks into chunks. Add a little bit of extra water if the dough is too dry (doesnt stick together when you press it between your fingers).
  • If you use oat flour / ground oats, you can also mix the ingredients in a medium bowl using a fork or your hands.
  • Transfer the mixture into your pan and press in evenly with the back of a spoon (dip it in cold water if the spoons sticks to the dough).
  • Press up some of the mixture to form the edges if you like (just don’t forget to use the bigger batch of ingredients from the two options above).
  • Now you can use the crust as is, just fill it with whichever filling you like and bake according to your filling recipe.
  • You can also pre-bake it at 350 (180 Celsius) for about 15 minutes.
