    • 2 tbsp Applesauce, unsweetened

    • 1/2 tsp Baking powder
    • 1/2 tsp Cinnamon
    • 1/4 tsp Nutmeg
    • 1 cup Oat flour
  • Oils & Vinegars

    • 4 tbsp Coconut oil
  • Nuts & Seeds

    • 1 container Modern oats apple walnut
    • 1/3 cup Walnuts or pecans

Ingredients

  • 2 eggs lightly beaten (flax or chia egg will work too)
  • 1 cup unsweetened almond milk (leave at room temperature so it isnt too cold)
  • 2 tablespoons unsweetened applesauce (organic suggested and at room temperature)
  • 4 tablespoons coconut oil melted and cooled
  • 1 container Modern Oats Apple Walnut*
  • 1 cup oat flour (oatmeal food processed in blender and i have no tested other flour!)
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Add ins:
  • ⅓ cup walnuts or pecans
  • *or ½ cup old fashioned oats but Modern Oats are preferred

Directions

  • Mix all ingredients together in medium bowl
  • Let batter sit for a few minutes so it thickens (you dont want it to be liquidy, if it is add a tad more oat flour)
  • Heat your waffle maker and add about 3 tablespoons of batter to the maker at a time to make one waffle depending on the size of your waffle maker (i followed instructions that came with my waffle maker for how much batter to put in at once)
  • Top with maple syrup, nut butter and your choice of fruit!
  • *You can also freeze these or keep in fridge for 5 days*
  • Serves: 8-9 waffles
