Alligator or Crocodile Gumbo

• Meat

  • 2 lbs Alligator meat

• Produce

  • 4 stalks Celery
  • 3 cloves Garlic
  • 1/2 cup Green bell pepper
  • 1/2 cup Green onions
  • 1/4 cup Parsley
  • 1/2 cup Red bell pepper
  • 2 large cans Tomatoes, stewed

• Baking & Spices

  • 1 tsp Black pepper, ground
  • 1 tsp Cayenne pepper, ground
  • 1/2 tsp Salt

• Dairy

  • 3/4 lb Butter

• Other

  • 2 pounds okra, stem and cook separately until tender

Directions

• Saute onions, garlic, peppers and celery in butter until soft. Add other ingredients, except okra, and simmer for 10 minutes in large covered iron pot. Add okra to other ingredients + some of okra cooking liquid and cook another 10 minutes. Add alligator meat and allow to cook over low heat until tender (approximately 1 hour). If gravy is too thick, add a little hot water. Serve over rice with hot buttered cornbread on the side.
