Almond Crumb Cake

  • 4 Eggs

• Baking & Spices

  • 2 tsp Almond extract
  • 1 1/2 cup Almond flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt

  • 1 cup Almonds, toasted

  • 8 tbsp Butter
  • 2 oz Cream cheese
  • 4 oz Half and half

  • 1/3 cup Thm gentle sweet (or my copycat
  • 1/3 cup Thm gentle sweet

Ingredients

• 2 T. butter, softened
• 2 oz. cream cheese, softened
• 1/3 cup THM gentle sweet (or my copycat)
• 4 eggs
• 2 tsp. almond extract
• 4 oz. half and half
• 1/2 cup each almond flour, coconut flour, & ground golden flax
• 1 tsp. baking powder
• 1/4 tsp. salt
• 6 tbsp butter, melted
• 1/3 cup THM Gentle Sweet
• 1 cup almond flour
• 1 cup sliced almonds, toasted

Directions

• Preheat oven to 350. Grease a square 8x8 pyrex with butter or cooking spray.
• In a bowl with an electric mixer combine all the batter ingredients. Mix thoroughly. Pour into the baking dish and spread evenly.
• Combine topping ingredients and mix until crumbs form. Sprinkle on top of the batter.
• Bake at 350 for 40 min until golden. If the topping starts to get dark cover with foil for the last 10 minutes.
