  • cheese (any of your choice), shredded
  • eggs
  • additional fillings: sautéed vegetables, bacon or ham, if desired.

Directions

  • Preheat oven to 350 F. Cut out a small layer off the top of each potato. Then scoop out insides, making sure a thin layer of potato flesh is left. Transfer potato flesh to another bowl. Brush insides of each potato with melted butter and season with a salt and pepper. Stuff each potato with cheese and add fillings if desired. Fill potatoes until about 3/4 full. Pour an egg into each potato and season with a little more salt and pepper. Top with chopped green onions, crumbled bacon or any toppings you want. Arrange potatoes on a baking pan and cook for about 20 minutes or until egg whites are set and yolks soft.
