Avocado and lime ice cream

  • 3 Avocados
  • 2 Limes, juice of

• Canned Goods

  • 1 can Coconut milk

• Baking & Spices

  • 1 pinch Salt
  • 1 tsp Vanilla extract

  • 220 g Condensed milk

Ingredients

• 3 avocados, peeled and seed removed
• 220g condensed milk
• 1 can (270ml) coconut milk
• juice of 2 limes
• 1 teaspoon vanilla extract
• pinch of salt

Directions

• Place all ingredients in the jug of a blender. Blend until smooth.
• Pour in a shallow metal tin (an aluminium loaf/cake tin works a treat). Cover with cling wrap and freeze in the freezer for at least 6 hours or overnight.
• Thaw for 5-10 minutes at room temperature before serving.
