Bailey’s Brownie Bites

  • 4 Eggs

  • 1/2 tsp Baking powder
  • 1 cup Chocolate chips
  • 3/4 cup Cocoa powder
  • 1 cup Flour
  • 3 cups Powdered sugar
  • 1/4 tsp Salt
  • 2 cups Sugar
  • 3 tsp Vanilla

• Dairy

  • 2 sticks Butter, unsalted
  • 1 cup Butter, unsalted

• Beer, Wine & Liquor

  • 1 cup Bailey's cherry liquor
  • 3 tbsp Baileys liquor

Ingredients

• Batter:
• 2 sticks unsalted butter, melted
• 2 cups of sugar
• 2 teaspoons vanilla extract
• 4 eggs
• ¾ cup of cocoa powder
• 1 cup of flour
• ½ teaspoon of baking powder
• ¼ teaspoon of salt
• 1 cup of chocolate chips
• 1 cup of Baileys Cherry Liquor
• Frosting Ingredients:
• 3 cups of Powdered Sugar
• 1 cup of Unsalted Butter
• 3-4 tablespoons of Baileys Liquor (depends how thick youd like it)
• 1 teaspoon of Vanilla

Directions

• Preheat oven to 350 degrees.
• In a large bowl combine butter, sugar and vanilla. Mix well.
• To the butter mixture, beat in an egg at a time being sure to mix egg thoroughly into mixture before adding another egg.
• Add in liquor. Mix well.
• In a separate bowl mix flour, baking powder, salt and cocoa powder together.
• Shift dry ingredients into wet ingredients. Mix.
• Fold in chocolate chips.
• Pour brownie batter into a well greased mini muffin pan.
• Bake for 8-11 minutes, until center comes out clean with a toothpick.
• Allow brownies to cool.
• In a large mixing bowl, whip butter with an electric mixer until smooth. Add in powdered sugar, mix together.
• Stir in liquor and vanilla.
• Top brownies with desired amount of frosting and finish with a cherry on top.
