Bailey's Irish Cream & Coffee Fudge

  • 2/3 cup Evaporated milk

  • 3 cups Granulated sugar
  • 1 tsp Vanilla extract, pure

  • 1 7 oz-jar Marshmallow cream

Ingredients

• ¾ cup of butter
• 3 cups of granulated sugar
• ⅔ cup of evaporated milk
• ⅓ cup of Baileys Irish cream
• 2 Tbsp cold coffee
• 1 - 7 oz-jar marshmallow cream
• 1 pkg of butterscotch chips
• 1 tsp pure vanilla extract

Directions

• In a small bowl combine Baileys Irish cream and the coffee. Microwave on high for 10 seconds. or until melted and dissolved well.
• In a medium saucepan, over medium heat, melt the butter, milk, sugar and marshmallow cream. Slowly stir in the Baileys coffee mixture; mix well and boil for 5 minutes.
• Remove from heat and stir in butterscotch chips and vanilla extract. Stir for 3-4 minutes. until the mixture is smooth. Pour into a foil lined 8 x 8 pan.
• Chill to set and then cut into pieces.
