  • 3 large bananas, mashed (about 1 1/4 cup)
  • 2 tablespoons pure maple syrup
  • 2 tablespoons honey
  • 1/3 cup roughly chopped walnuts (or almonds, pecans)
  • 2 1/4 cups quick oats (not whole oats)
  • 1/3 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Optional: 1/3 cup dark chocolate chips
  • 1 1/2 tablespoons chia seeds

Directions

  • Preheat the oven to 325°F. Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Combine all of the ingredients in order listed into a large mixing bowl. Using a large rubber spatula or wooden spoon, mix until all the ingredients are combined. The dough will be thick and sticky.
  • For easy handling of the dough, spray your hands with cooking spray. Grab 3 Tablespoons of dough, roll into a ball and drop onto the cookie sheet. Slightly flatten the tops into desired thickness— the cookies will not spread in the oven.
  • Bake for 14-15 minutes, depending on thickness until edges are very slightly brown. These took exactly 14 minutes. Baking longer than 15 minutes will result in a dry cookie. Allow the cookies to cool completely on the baking sheet. Cookies stay fresh at room temperature for up to 1 week.
  • Make ahead: Raw dough can be frozen for up to 3 months— bake frozen cookie dough balls for 1 extra minute. Baked cookies can be frozen up to 3 months, then thawed overnight in the refrigerator.
  • Chia seeds can be omitted, but do to health benefits I like to add them.
  • Using Spark Food Calculator, each cookie (without chocolate chips) is 129 calories. I typically crumble a cookie over Greek yogurt for breakfast for a snack.
