Banana Cupcakes

Ingredients

• 2 cups all-purpose flour
• 2 teaspoons baking soda
• 3 bananas, mashed
• 1 cup granulated sugar
• 2 eggs
• 3/4 cup applesauce
• 1 teaspoon vanilla
• 4oz. cream cheese, softened
• 4 tablespoons butter, softened
• 1 teaspoon vanilla
• 2 cups powdered sugar
• about 1/2 cup banana candies (like Runts, or order banana candy online)

Directions

• Cupcakes Preheat oven to 325 degrees. Grease 14 muffin cups or line with papers. In a medium bowl mix together the flour and baking soda. Set aside. In a large bowl, using and electric mixer, lightly beat bananas and granulated sugar until smooth. Add eggs one at a time until blended then add the applesauce and vanilla and beat on medium speed for 2 more minutes. Then add the flour and baking soda a little at a time mixing until blended together. Pour batter into prepared muffin cups ( I filled mine about 3/4 full) and bake 20 to 25 minutes or until a toothpick inserted into the middle comes out clean. Cool completely before frosting. Frosting Using an electric mixer beat the cream cheese, butter and vanilla until well blended. Add the powdered sugar a little at a time a beat until smooth and creamy.
