Ingredients

• 80g vanilla whey protein (I used Jamie Easons Whey Isolate in Natural Vanilla)
• 1/2 cup baking stevia (or sweetener of choice)
• 1/4 cup coconut flour
• 1/2 tsp. baking powder
• 1/4 tsp. salt (optional)
• 1/4 cup cashew butter (I used You Fresh Naturals Cashew Coconut Butter in Birthday Cake)
• 1/2 cup nonfat plain greek yogurt
• 2 egg whites
• 1 tsp. vanilla extract
• 1 tsp. butter extract
• 2 tsp. natural sprinkles (optional)

Directions

• Preheat oven to 350 degrees F. Whisk together dry ingredients (through salt). Mix in wet ingredients until just combine (through butter extract). Add sprinkles if desired (optional). Place rounded tablespoons of cookie dough on a baking sheet lightly coated with cooking spray. Press flat with a fork or wetted fingertips (batter will be sticky). Bake for 8-10 minutes until cookies are golden brown underneath. Enjoy!
