It’s typically a French baguette stuffed with fried oysters or shrimp, lettuce, tomatoes and a remoulade sauce. Simple. Delicious. Amazing. Fattening. That’s a little bit of a problem for athletes and generally every other person in the world. So what do we do if there is a po boy craving like the one I had the other day? Well, we head to the grill! With shrimp, not oysters. I’m a fan of oysters, but not grilled in this type of sandwich. Besides, shrimp works just perfectly! It still has a bite to it even without being fried, it holds up to a great blackening seasoning very well and cooks so fast. It’s one of the many things that makes this shrimp po boy recipe so good. Besides the bread which some people might argue is too heavy (try saying that after a 5 bike ride) it’s a pretty light sandwich. There is slight slathering of a remoulade sauce, lettuce and cabbage, tomatoes and a few slices of onion to top off the shrimp. As I was saying to friend last night about making a grilled po boy… You throw some seasoned shrimp on the grill and then place in a baguette with some lettuce, tomato an onion. It is just that easy. Unless you think making a little sauce from the ingredients is your fridge is complicated because that’s pretty much all remoulade sauce is. The game plan to make this sandwich in 15 minutes is pretty easy and goes back to the multi-tasking I always talk about 🙂 Get the grill going to high. While it’s heating up for about 10 minutes, you are going to season the shrimp with your favorite blackening seasoning, some lemon juice and a dash of olive oil. Set that aside while you make the sauce and slice the veggies. After 10 minutes, place the shrimp on the grill for a few minutes on each side and then arrange your sandwich. Like I said, just that easy 🙂 If you don’t have a grill, just sauté shrimp in a skillet. Instructions Turn your gas grill on high. While its heating up for about 10 minutes, you are going to season the shrimp with your favorite blackening seasoning, some lemon juice and a dash of olive oil. Set that aside. Make the sauce by combining the mayo, ketchup, sweet relish, Worcestershire, a bit of lemon juice and some salt. Taste and adjust the seasonings if need be. Next, slice the veggies. After 10 minutes, place the shrimp on the grill for a few minutes on each side and then arrange your sandwich.
