3 Minute Blueberry Banana Microwave Baked Oatmeal in a Mug- quick, easy and oh so scrumptious!

Ingredients

  • ½ cup old-fashioned rolled oats*
  • 1 tablespoon ground flax seed
  • 1 egg
  • ½ cup unsweetened vanilla almond milk**
  • ⅓ of a medium banana, mashed
  • ¼ teaspoon cinnamon
  • 2 teaspoons maple syrup
  • ⅓ cup fresh blueberries***

Directions

  • Spray a medium to large microwave-safe mug with cooking spray and inside combine all ingredients except blueberries. Gradually stir in blueberries.
  • Microwave on high for 2-3 minutes. (I checked my mug at 2 minutes and then let it cook 1 minute more.)
  • Stir in extra milk, yogurt or nut butter; if desired.
