Description

This recipe makes authentic Brazilian cheese bread rolls (Pao de Queijo). These breads are so yummy and cheesy, and they are gluten-free!

Ingredients

  • ⅓ cup vegetable oil
  • ⅓ cup water
  • ⅓ cup milk
  • 1 tsp salt
  • 2 cups tapioca flour
  • ⅔ cup grated Parmesan cheese
  • 2 eggs

Directions

  • Preheat the oven to 375F.
  • Line the baking sheet with parchment paper.
  • Pour olive oil, water and milk into a saucepan, add salt and stir. Heat it over High heat just until the mixture comes to a boil. When it comes to a boil, remove it from heat immediately. Add the tapioca flour and stir until smooth. Set aside and let it cool for 10 minutes.
  • Whisk the eggs in another bowl and set aside.
  • When the milk mixture cooled down, add the Parmesan cheese and eggs to it, and mix until combined. The mixture will be chunky and have the texture like cottage cheese.
  • Put rounded ¼ cup balls of mixture on a baking sheet.
  • Put the cheese bread in the oven on the middle rack and bake for 20-25 minutes, until the tops of the bread rolls are golden-brown.
