Ingredients

  • 12 oz. semi sweet chocolate, coarsely chopped
  • 4 oz. bittersweet chocolate, coarsely chopped
  • ½ cup unsalted butter
  • 1⅓ cup flour
  • 1 tsp. baking powder
  • 1½ tsp. sea salt
  • 4 eggs, room temperature
  • 1½ cups packed brown sugar
  • 2 tsp. vanilla extract
  • 12 oz. semi sweet chocolate, coarsely chopped
  • 1 cup unsalted butter, room temperature
  • ½ cup packed brown sugar
  • 2½ cups confectioners sugar
  • ⅔ cup flour
  • ½ tsp. salt
  • 2 tbl. cream
  • 2 tsp. vanilla extract
  • 1 cup. mini chocolate chips.

Directions

  • Heat oven to 350 degrees. Line two pans with parchment paper.
  • Combine the chopped semi-sweet and bittersweet chocolate with the butter in a glass bowl set over a pan of boiling water. Heat until the butter and chocolate have melted and are smooth, stirring occasionally.
  • In a separate bowl, combine the flour, baking powder, and salt.
  • Use an electric mixer to combine the eggs, brown sugar, and vanilla. Beat on medium-high speed until the sugar has dissolved, about 5 minutes. Reduce the speed and slowly add the chocolate mixture, blending until combined. Stir in the dry ingredients until just incorporated. Add the remaining chopped chocolate.
  • Drop heaping tablespoons of dough onto the baking sheets. Bake for 10-12 minutes until the edges are set and the top is crackly. The center should still be soft. Allow to cool on the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  • Using a mixer to beat the butter and brown sugar until creamy. Add the confectioners sugar and beat until smooth. Add the flour, salt, and vanilla extract. Stir in 1 tablespoon of cream and beat until smooth and fluffy. Gradually add the additional cream if needed. Stir in the mini chocolate chips.
  • Frost the bottom of half of the cookies, then top with the other cookies to create sandwiches.
