Ingredients

  • maida or all purpose flour - 2 cups
  • warm milk - ¼ cup
  • curd - 2 tablespoons
  • oil - 1 tablespoon
  • dry yeast - 1 tablespoon
  • sugar - ½ teaspoon
  • luke warm water - as required
  • salt - to taste
  • soft butter - for spreading on the naan
  • coriander leaves - 1 tablespoon, finely chopped
  • toasted sesame seeds

Directions

  • Take ¼ cup of milk in a bowl. Sprinkle yeast over it. Add sugar, mix well and keep it aside till yeast ferments and become frothy.
  • Add flour, curd, oil and salt in a bowl. Mix well with your fingers. Add the fermented yeast solution and mix well.
  • Add water little by little and knead it to a soft dough. Knead it well for 5 - 6 minutes or until the dough becomes soft. The dough for naan should be soft but not sticky.
  • Cover the bowl and let the dough rest for 2 hours or till it doubles in volume. Once the dough doubles in volume, take it out and knead it once more.
  • Divide the dough into equal sized balls. Cover and keep it aside for another 5 - 6 minutes before rolling.
  • Keep the dough on a floured surface . Roll a portion into tear-shaped naan, about ¼-inch thick, and brush with little water on one side.
  • Heat a tawa on medium flame. Once the tawa is hot enough, place the rolled naan on to the tawa, watered side facing down. The flame should not be too high or too low. You will find that it starts puffing up on top.
  • This will take around 10 seconds, then invert the tawa and cook the other side directly on flame (hold tawa at a distance of 2 inches away from fire) till chars appears.
  • Brush with some butter and sprinkle sesame seeds. Serve butter naan hot with any spicy gravy.
