Preheat your oven to 425 degrees. Line a baking sheet with parchment paper.
In a small bowl, combine the ingredients for the Cajun spice blend. Place the butternut squash in a large bowl and pour the melted ghee/butter/coconut oil on top. Stir well to combine. Sprinkle the spice blend on top of the butternut squash and stir once more, until well combined.
Spread the coated butternut squash on the parchment lined baking sheet. Bake for 20-22 minutes, or until the butternut squash begin to brown. Top with the chopped cilantro and enjoy!
