Caprese bites with basil vinaigrette

Ingredients

• 24 mozzarella balls
• 24 pepperoni slices (or salami)
• 12 cherry tomatoes, halved
• ⅓ cup olive oil
• 1 tablespoon balsamic vinegar
• ¼ teaspoon garlic powder
• 18 basil leaves
• Salt & pepper
• Toothpicks

Directions

• Spear mozzarella, cherry tomato, and folded pepperoni on to tooth pick.
• In a food processor, add olive oil, balsamic vinegar, garlic powder, basil, and salt & pepper. Pulse until smooth.
• Drizzle basil vinaigrette over bites.
