    • 2 lbs Pork belly
    • 1 Water just enough to barely cover the pork, Hot

    • 1 Cilantro
    • 1 Slices Cucumber
    • 3 cloves Garlic
    • 1/2 Onions, large
    • 1 Peanuts, roasted
    • 1 Pickled carrots and radish
  • Condiments

    • 2 tbsp Soy sauce
  • Baking & Spices

    • 1/2 tsp Black pepper, freshly ground
    • 4 tbsp Brown sugar
  • Oils & Vinegars

    • 1 tbsp Cooking oil

Directions

  • Add sugar in a large oit. The sugar will start to melt and turn into brown color gradually. Do not step away as you dont want to burn the sugar. Continue to stir with wooden spoon until it turns into deep caramel color. Add in the pork slices and stir to coat the pork and let it cook for about 2 minutes as it will render out some fat from the pork belly. Add in the garlic and saute for about 30 seconds. Add in the onions and continue to saute until they are fragrant and soft, about 1 minute. Add in the fish sauce and freshly ground black pepper and continue to saute for another minute. Add in hot water and bring it to a boil and then let it gently simmer for the next 30 to 45 minutes or until the pork belly is tender and absorbed the beautiful caramel color. Have a taste. It should be sweet and savory. Add more soy sauce to your taste
  • Place 2 slices of cucumber on one side of the flat steamed buns. Place 1 or 2 slices of pork belly. Top with pickled carrots and radish, cilantro, and crush peanuts. Serve immediately
