Carrot cake in a mug

  • 1/4 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • 1/8 tsp Salt
  • 2 tbsp Sugar
  • 1/4 tsp Vanilla

• Oils & Vinegars

  • 2 tbsp Vegetable oil

• Nuts & Seeds

  • 1 tbsp Pecans

• Dairy

  • 4 tbsp O.j. or milk or buttermilk would work

• Other

• oven-proof and microwavable
• 6 Tbsp all purpose flour
• 2 Tbsp sugar, your choice, white or brown
• 1/4 tsp baking soda
• 1/8 tsp salt
• 1/4 tsp cinnamon
• 1/8 tsp nutmeg
• 4 Tbsp o.j. or milk or buttermilk would work
• 2 Tbsp vegetable oil
• 1/4 tsp vanilla
• 3 Tbsp carrots, finely grated
• 1 Tbsp pecans, chopped (opt.)
• 1 Tbsp raisins (opt.)

Directions

• 1Mix it all up and make sure that you reach the bottom of the mug, too, mix well. 2Microwave for 2 to 2 1/2 minutes. Let it cool a bit. Dollop with cream cheese and drizzle some honey on top.
