Today we have sunshine – and I couldn’t be happier! I’m definitely not a grey skies, gloomy weather kinda girl. In other words, as much as I love to visit Portland and Seattle…I could never live there. Nope. My body craves sunshine and knowing what I know about my body, I firmly believe it’s telling me that I need more vitamin D. And who am I to argue? Off I go to Costa Rica! (kidding….though I’m kinda dreaming of it). So we’ve regained our sunshine in SoCal (at least for the next few days), but we still don’t have our warmth. I know I must seem like a sissy to my East Coast friends, but yes, I’ve even been turning on my electric blanket (ha!). It’s been getting into the 30’s at night…and that’s waaaay too cold for me. Anyone else always have frigid hands and feet like me? It’s not fun. So another way I’ve been warming up is with this chai spiced coconut milk. And believe me when I say, it warms you from the inside out with a blend of ginger, cinnamon, cardamom, cloves and star anise. It’s like a warm hug in a mug. Now, I use coconut milk as too much almond milk doesn’t agree with my tummy, but you could also use cashew milk (have you seen my video?) or other non-dairy milk. I also put quite a bit of fresh ginger in this, because well, I LOVE fresh ginger. Ginger is not only warming, it stimulates circulation (see, cold hands and feet comment above) so it’s perfect on a day when I’ve become a frozen human statue. Ginger is also anti-inflammatory and immune boosting (along with many of the other spices used), which makes this chai spiced coconut milk perfect for the winter months when coughs and colds start making their rounds. Nobody’s got time to get sick, right?! Just throw all the ingredients together in a pot, boil, then blend in a high-powered blender (like my fave Vitamix). It does all the frothing for you. Then, all you have to do is pour and drink your warm hug. Enjoy!   • 1 cup water
  • 1-2 inch piece fresh ginger, peeled and roughly chopped (depending how spicy you like it)
  • 4 Medjool dates, pitted
  • 1 whole star anise
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 1-2 pinches cardamom
  • 1 pinch cloves
  • extra whole star anise for garnish

Directions

  • Heat a pot on medium heat and add all ingredients. Bring to a boil, then reduce heat to low, cover and simmer for 5-10 minutes.
  • Use a spoon to remove the whole star anise. Pour the remaining ingredients into a high-powered blender and blend for one minute, or until smooth.
