    • 1 tbsp Chives
  • Refrigerated

    • 1 cup Almond milk, unsweetened plain
    • 1 Egg, white separated from yolk
  • Baking & Spices

    • 1/2 tbsp Baking powder
    • 1/4 tsp Salt
    • 1 cup Whole wheat pastry flour
  • Oils & Vinegars

    • 1/2 tbsp Olive oil or melted coconut oil
  • Dairy

    • 2/3 cup Cheddar cheese, sharp
    • 2 tbsp Greek yogurt, plain

Directions

  • In a mixing bowl (I used a stand mixer), beat egg white until stiff, transfer to another bowl and set aside.
  • In original mixing bowl, mix together the egg yolk, salt, almond milk, yogurt, oil, flour and baking powder until mostly smooth.
  • Gently fold in the cheese, chives and the whipped egg white until combined (there will still be some small lumps of egg whites, thats ok).
  • Cook in a waffle maker according to your waffle makers instructions. As each waffle maker will hold a different amount of batter, you may need to do a little math here (if you have any questions feel free to contact me!), 1/2 cup of batter is one serving.
