Gluten Free Orange Chicken with Paleo Option

Ingredients

  • 2 - 3 large Skinless Chicken Breasts ( approx 2lb)
  • 1 - 2 tbsp oil
  • MARINADE
  • ⅓ cup orange juice
  • 2 cloves garlic, crushed
  • 1 inch piece ginger, peeled and grated
  • ⅓ cup soy sauce (or coconut aminos for paleo)
  • 1 tbsp dry sherry (optional)
  • SAUCE
  • 1 cup orange juice
  • zest of one orange
  • 4 slices of peeled ginger
  • 3tbsp water
  • 3 tbsp brown sugar (or honey for paleo)
  • 4 tbsp soy sauce (or coconut aminos for paleo)
  • 2 tbsp cornstarch (or arrowroot for paleo)
  • GARNISH
  • Sesame seeds
  • Green onions

Directions

  • Cut your chicken in to bite size pieces and place in a dish with all the marinade ingredients, put in the fridge for 30 minutes to 1 hour.
  • put the oil into a non stick skillet and heat, cook the marinaded chicken in the pan over a medium high heat for 10 - 15 minutes or until cooked.
  • In another pan add the sauce ingredients (except the cornstarch) and put it on the stove to simmer for five minutes.
  • Mix the cornstarch with 1 - 2 tablespoons of water.
  • Remove the sauce from the stove and add half the cornstarch mixture and stir well, put it back on the stove and warm on a low heat until it thickens, if it needs to be thickened more add the rest of the cornstarch.
  • When the chicken is cooked use a slotted spoon to remove it from the cooked marinade.
  • You can either add the chicken to the pan with the sauce, or pour the sauce over the chicken, whatever you prefer!
  • I served it with rice, but a side of green beans or other veggies will work too.
  • Serves: 4
