    • 1/4 cup Coconut rum
  • Liquids

  • ½ c. sugar
  • 3 Tbsp. water
  • 1 Tbsp. lemon juice
  • 6 eggs
  • 1 14 oz can sweetened condensed milk
  • 1 13.5 oz can coconut milk
  • ¼ c. coconut rum
  • a dash of salt
  • 1 box German Chocolate Cake Mix
  • ingredients as directed on cake box
  • coconut flakes
  • fresh berries of your choice

Directions

  • Preheat oven to 350 degrees.
  • Spray bundt pan with non-stick cooking spray and place prepared bundt pan in the center of a large baking pan.
  • In a small saucepan, combine sugar, water, and lemon juice over medium-high heat.
  • While stirring consistently, cook sugar mixture until it caramelizes to a deep rich brown color, approximately 5-7 minutes.
  • Pour caramelized sugar into prepared bundt pan. Set aside.
  • In a large mixing bowl, mix 6 eggs until well beaten.
  • Add sweetened condensed milk, coconut milk, coconut rum, and dash of salt. Mix well. Pour into bundt pan atop the caramelized sugar.
  • In a large mixing bowl, prepare German chocolate cake mix with ingredients as directed on box.
  • Gently pour prepared cake mixture over custard mixture. Do not mix in, the mixture will look as if it blends as you pour, but it will separate in the cooking process.
  • Add about 1 inch of boiling hot water to the baking pan.
  • Carefully slide baking pan with hot water and bundt pan in the center into the preheated oven.
  • Bake for 1 hour or until a toothpick inserted in the center come out clean.
  • Let cool for 10-15 minutes then invert onto a serving dish.
  • Garnish with coconut flakes and fresh berries.
  • Serve warm or refrigerate and serve cold
  • Serves: 1 cake
