Description
My mother made this hard cinnamon candy many times for us as kids, says Marganne Winter Oxley of Klamath Falls, Oregon. Now I fix it for my own family and to give as gifts at Christmas.
I sold this at a bake sale, and it was gone within 5 minutes.
This is the first time I have ever made rock candy and the recipe came out perfectly! I did add an additional tsp of cinnamon flavoring because I was using extract instead of oil. I was wondering if it would be a problem to double up on this recipe if you had two pans to pour it into?
Great! Next time I think ill double the cinnamon oil though there was only cinnamon flavor in the beginning then went away.....overall great easy recipe

I have made this so many time and my family just loves it!! The only thing that I changed is that I use a cookie sheet about 1/2 inch deep and spray the tray with none stick cooking spray to coat the cookie. After it cools, it pops out in one piece. My wife started using cooking scissors to cut it into squares before it cools all the way. This is so the pieces do not have sharp edges. Thanks so much for posting this recipe!!
I would use parchment instead of foil, and to prevent the candy from sticking together I would coat with powdered sugar.
Had no problems with recipe except after putting candy in container all pieces stuck together, would like suggestions so this doesn't happen.
I had no problems with the candy sticking to the foil... Maybe use Parchment Paper?
