Ingredients

  • Makes one 9x13 or two 9 inch cakes
  • Cake:
  • 2¼ Cups flour, spooned and leveled
  • 1 Tsp. Salt
  • 3½ Tsp. Baking powder
  • ½ Cup salted butter, softened
  • 3 large eggs, at room temp
  • 1¼ Cups milk
  • 1 Tsp. vanilla
  • 1 Cup packed light brown sugar
  • 1 Tbsp. ground cinnamon
  • Glaze:
  • 2 Cups powdered sugar
  • 4 Tbsp. milk
  • ¼ Tsp. vanilla
  • ¼ Tsp. cinnamon

Directions

  • Preheat oven to 350 degrees.
  • Prepare one 9x13 inch pan or two 9 inch round pans by greasing them well with baking spray or butter.
  • Sprinkle a little bit of flour into the pan, then tilt and shake to distribute evenly.
  • If there is excess flour, simply tap it out over the sink.
  • In bowl of stand mixer with paddle attachment, or with hand mixer, beat the softened butter together until light and fluffy.
  • Add eggs one at a time with mixer running and continue to beat over medium speed until mixture is creamy and pale yellow.
  • In a medium bowl mix together the flour, salt, and baking powder.
  • With mixer on low speed add the dry ingredients into the butter/egg mixture.
  • Next, add the milk and vanilla and beat mixture on high for 1-2 minutes, scraping down the sides of the bowl as needed.
  • Pour cake batter into prepared pan.
  • In a small bowl mix together the brown sugar and cinnamon and sprinkle over the cake batter.
  • Using a butter knife, swirl the cinnamon sugar into the cake batter.
  • Bake for 35-45 minutes, until toothpick inserted in center comes out clean.
  • Allow cake to cool for 20 minutes.
  • When cake is cool, run knife gently around cake to ensure its fully removed fro side of pan.
  • Flip pan/pans over gently onto a flat surface or wire rack.
  • Allow cakes to cool almost completely before glazing.
  • Glaze:
  • Beat together the powdered sugar, vanilla, milk, and cinnamon for 2-3 minutes.
  • Drizzle glaze over cake as desired.
  • Serves: 10
