Citrus Thyme Bread

  • 1/2 cup Milk
  • 1/2 cup Plain or vanilla greek yogurt

Ingredients

• 1/2 cup butter
• 3/4 cup white sugar
• 1 egg
• 1/2 cup milk, less 1 tablespoon
• 1 tablespoon citrus juice
• 1/2 cup plain or vanilla greek yogurt
• 1 3/4 cup AP flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 2 tablespoons chopped fresh thyme (1 tablespoon if using dried)
• 2 tablespoons citrus zest

Directions

• Cream butter and sugar together. Add the egg and mix until combined.
• In a separate bowl (or measuring cup), combine milk, citrus juice, and yogurt. Set aside.
• In another bowl, combine flour, soda, salt, thyme, and zest.
• Alternate adding the flour mixture and the milk mixture until both are just barely fully incorporated.
• Divide into three mini-loaf pans and bake at 350 degrees F for 20-25 minutes or until a toothpick comes out with a few crumbs on it.
