Classic Nut Free Banana Muffins

    • 2 Eggs, large
  • Condiments

    • 1/4 cup Butter or margarine
  • Baking & Spices

    • 1 1/2 cup All-purpose flour
    • 1 tsp Baking soda
    • 2 tsp Cinnamon
    • 1 cup Granulated sugar
  • Other

    • 3 Large or 4 small ripe bananas

  • 1/4 cup butter or margarine; softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cup all purpose flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 3 large or 4 small ripe bananas

Directions

  • Preheat oven to 350 degrees F and line your muffin tins with liners (approx 18) Cream together butter (or margarine) and sugar. Beat in the eggs, one at a time until all combined. Mash the bananas and add them to the creamed mixture. Combine flour, baking soda and cinnamon together and then combine into the banana mixture. Fill each muffin tin 3/4 full of batter, and bake in the oven for 30 minutes, or until the tops spring back with touch. Remove and let cool or wire rack. Store in air tight container. Enjoy
