if your cauli was frozen, let it thaw completely and pat it dry. break up the florets and add them to your food processor. pulse until it looks like rice! wont take much. 10 secs max.
heat a large wok or skillet over medium-high heat and add coconut oil and let it melt. add your onion next and saute until tender and translucent. add spices! you can use cardamom if you have some but you can also mix equal parts cinnamon and nutmeg like i did.
add cauli rice and then the coconut milk. stir! saute it for about 10 minutes until the liquid is absorbed.
if youve ever made a roux, well you know it requires constant stirring and patience. this stuff is the same way. keep stirring and tossing it about until the liquid is gone and it dries out and becomes more rice-like. you can do it!
