Coconut Cream Cookies

  • 1 small pkg Coconut cream pudding, instant

Ingredients

• ¾ c. butter, softened
• ¾ c. brown sugar
• ¼ c. sugar
• 1 small pkg instant coconut cream pudding
• 2 eggs
• 1 tsp. coconut extract
• 1 tsp. baking soda
• ¼ tsp. salt
• 2¼ c. flour
• 1½ c. chocolate chips
• ½ c. shredded coconut

Directions

• Preheat oven to 350 degrees.
• Cream butter and sugars together.
• Add eggs and coconut extract and beat for 2 minutes.
• Add pudding, flour, salt, and soda. Beat until combined.
• Stir in coconut and chocolate chips.
• Drop onto parchment lined cookie sheets. Bake 8-10 minutes. Be careful to not over bake.
• Let cool on wire rack for a couple minutes.
