Coffee and Cream Mug Cake

  • 1 tbsp So delicious coconut milk, unsweetened or organic

  • 1/4 cup All-purpose flour
  • 1/4 tsp Baking powder
  • 3 tbsp Sugar
  • 1 tsp Vanilla
  • 1 Whipped cream

• Oils & Vinegars

  • 1/2 tsp Oil

• Drinks

  • 3 tbsp Coffee, strong

Ingredients

• ¼ cup all purpose flour
• 3 Tablespoons sugar
• ¼ teaspoon baking powder
• 1 teaspoon vanilla
• 3 Tablespoons strong brewed coffee
• 1 Tablespoon So Delicious Coconut Milk (unsweetened or organic)
• ½ teaspoon oil
• Whipped cream (I used coconut whipped cream)

Directions

• In a small bowl, whisk flour, sugar, and baking powder together.
• Stir in remaining ingredients and whisk well.
• Pour into a greased microwave safe mug or ramekin and microwave for 1 and a half minutes on power 8 (out of 10)
• Let cool before removing from mug or ramekin and top with whipped cream.
• Enjoy!
