Description
This salad has been one I’ve been enjoying a few times a week for lunch this summer. It is so light and refreshing! Plus it’s very simple – with most of the ingredients easily available in pre-made forms (bagged chopped salad mixes and unseasoned rotisseries are the best!). Locally, I get unseasoned rotisseries from Whole Foods and Sprouts. For the bagged salad mix, I’ve used everything from Slaw/Asian-style cabbage-based mixes (even my kids like it this way because it’s so crunchy – it also keeps very well if you want to save some for the next day) to Romaine mixes to Kale mixes with brussels sprouts. I really love using the chopped mixes over the larger-leaf varieties because it adds great texture and doesn’t feel like you’re eating a tremendous amount of leafy greens when, in reality, you totally are. :)
