    • 250 g Coloured marshmallows

  • ½ cup butter
  • 1 cup peanut butter
  • 250 grams of butterscotch baking chips
  • 250 grams of coloured marshmallows

Directions

  • Put butter, peanut butter, and butterscotch chips in a large saucepan.
  • Melt over medium heat, stirring constantly until the mixture is smooth.
  • Remove from heat and allow the mixture to cool until you can comfortably put your hand on the bottom of the pan. (In the size pot I used it took about 30-40 minutes.)
  • This cooling step is important if you like the peanut butter butterscotch to be evenly distributed throughout the marshmallows. Otherwise a thick fudgy layer will settle at the bottom of the pan with the marshmallows on the top.
  • Add marshmallows and stir well to evenly coat.
  • Pour into a parchment lined 8x8x2 or 9x9x2 pan and spread mixture evenly in pan.
  • Put the pan of goodies into refrigerator until cold and set. (3-4 hours)
  • Remove from the fridge and flip the squares onto a cutting board,
  • Remove parchment and flip squares right side up.
  • Cut into squares.
  • If storing/freezing, separate layers with waxed paper.
